Study on Improving Goose Meat Quality
A study on geese found that feeding them oats and barley during the final stage of fattening led to better results for meat and liver quality. Geese fed these grains had higher protein levels, especially in the liver and breasts, and exceeded essential amino acid standards from the World Health Organization. Oats and barley also boosted important minerals like iron and copper in the liver, while corn-fed geese had the lowest mineral levels. Additionally, meat from oats-fed geese had a more desirable color, with darker, redder breasts and less yellowing in the legs compared to those fed corn.
The meat and liver samples were analyzed for total nitrogen by the Kjeldahl procedure (ISO 5983-2:2009) using an OPSIS LiquidLINE KjelROC Analyzer. Read more about the instrument here >>
